¡La Primavera!
Comida España With the onset of spring, cooks are putting away their big roasting pans and preparing for those lighter dishes that celebrate the new season.  One of the more versatile sauces that Spain is known for is the Romesco Sauce. 

It originated in the ancient city of Tarragona, which is in the southern region of Catalunya (Catalonia).  However, it is a common sauce throughout Spain.  It compliments chicken and white fish.  It’s great over pasta or even a baked potato topping.  It’s delicious spread for bread.  Best of all, it’s very easy to make with a food processor.  Try our recipe at: www.comidaespana.com under recipes.  We would even suggest tweaking the recipe by adding one of our types of paprika: sweet, bittersweet, smoked or hot.

Las Fiestas de España (Festivals of Spain) Comida España Spain is really into celebrating everything!  There are fiestas happening almost everyday in some town throughout the year.  Here are some of the bigger celebrations for the summer months:
Pentecost or Whitsun in May or June.
Corpus Christi in May or June.
Midsummer’s Eve celebrating St. John the Baptist in June.
Los Sanfermines or better known as, The Running of the Bulls in Pamplona in July.
Assumption Day in August.
La Tomatina or tomato fight festival in Bunyol  (near Valencia)in August.
(Please note that each town might have a different day or days of their celebration.  Check the location for their scheduled date.)

A travel tip: If you are trying to get somewhere in a hurry on the day or start of any holiday, take a very deep breath because the traffic will be at a standstill to and from the town celebrating.  We learned this the hard way going from Sevilla to the southern coast at the start of Corpus Christi.
